The Restaurant

RYE was established in 2014. RYE offers a refined dining experience in a stylish urban rustic setting.  Located in the heart of Downtown Appleton next to the CopperLeaf Boutique Hotel.  RYE serves lunch and dinner; Monday through Saturday.

RYE is a Chef Driven Restaurant, lead by Chef Nick Morse along side his dedicated Culinary Team.  Nick’s passion for food developed at 14 years of age while under the direction of his Step Father Chef JR Schoenfeld at Chives Restaurant in Suamico. Over the course of several years, he learned the values and challenges of every station in the ‘Back of House’ finally earning the title of Sous Chef in 2010. Wanting to expand his knowledge of food and cooking styles, Nick took a seasonal position for the summers of 2011 and 2012 at the Harbor View Hotel & Resort on Martha’s Vineyard (Massachusetts) where he met his wife, Charlotte. In 2013, Nick & Charlotte returned to Wisconsin to assist with the opening of Bleu Restaurant & Lounge in DePere as Head Chef & Maitre ‘d. In early 2015, Nick and Charlotte made the transition to RYE.

The Food

At RYE, we believe food is at its best when it is fresh, local, and seasonal. Creative, beautiful presentation is an important part of the dining experience, and should be executed with thoughtfulness and care. We work with local farms and vendors to procure the freshest, ingredients and everything is made from-scratch, by us, in our kitchen.

We carry our values into each location and train the staff to never cut any corner. Everything that comes out of our kitchen is made from scratch, from our dressings to our ice cream. Vegetables and fruits are sourced locally as much as possible. Our menu changes often to showcase seasonal products.

The Drinks

Relax with one of our 8 draft beer selections featuring seasonal artisan brews. Try our seasonal craft cocktails created with homemade simple syrups, fresh juices & house grown seasonal herbs. Enjoy a glass of wine or enhance your dining experience by pairing your meal with one of our featured reserves. If you prefer whiskey/bourbon, we have you covered with 30+ selections to choose from…our name is RYE after all.
